Another one is Overnight, the story of how the director of The Boondock Saints went nuts during the making of that film. The movie that really got me into documentaries was Sherman's March, which is more of a personal film about the director's search for love but also includes a lot about fears of nuclear war in the early 80s. And then there's The Thin Blue Line, a crime doc that actually got a case re-opened. The fact that the zombies got off of a plane makes me think it could be Nightmare City.
