Arya learned not to show emotions or let her guard down, but the scenes on the road were meant to show she cannot hide her true self. In the scene with Hot Pie, the camera zooms in on her face when she is acting deadpan. They are wanting us to pay attention to her facial expressions, because later she changes dramatically when she learns Jon is alive. We also see the real Arya when she decides not to kill the Lannister soldiers, the Nymeria scene, the end of the crypt scene with Sansa, and after she spars with Brienne. The reason for giving this screen time is probably related to how the conflict with Sansa is resolved.
The scenes with Sansa in the latest episode, she is trying to find out if Sansa is working with Littlefinger to take power away from Jon, so she is pushing her buttons a bit. She knows how the Sansa from season 1 would react, but now she sees Sansa has grown and changed since then.

Only way it does make sense is if the Night King knew in advance that the dragon was going to be there. When the wildlings attacked the wall, the giants had mammoths with big chains like that, so the Walkers could definitely find stuff like that up there.
The first 3 episodes of next season were originally going to be the last 3 of this season, something happened before season 5 where they had to add 3 more episodes to the entire show. Remember they didn't have Bran at all in season 5. We probably won't know until after the show ends, but I'd guess their biggest problem was the Dorne storyline turned out to be a lot more than they could do in the time they had, so that's where they did a lot of cutting.
It was funny the Hound asked him if they were together, he said not yet but he is sure they will because she gives him this look every time she sees him.
I like to think Bran sent a raven to Dragonstone before Jon even left.
Also she needed to know the lords and the Vale would have her back, she let Littlefinger do that work for her.

They ultimately want to convince Cersei to meet but they want to know how that can happen. Tyrion says the only way to do that is for him to go through Jaime.

Aside from the whole resurrection bit, it was clear after Battle of the Bastards that Jon is being kept alive by divine intervention.
Something happened to Bran that hasn't been revealed yet. Remember a couple times he was warned not to stay too long when he first started going into the past.

Sansa has to know Arya got that note from Littlefinger. She sent Brienne away because that's what Littlefinger wanted her to do. It makes her appear vulnerable and in need of his help. Her plan depends on Arya having her back when the time comes. She doesn't know this for sure, but she believes enough to take that risk.
Arya should be the one to find out what is west of Westeros.
