Last time I was in Seattle, there was quite a few Asian people there. In a cast of 24 there is one light skinned black female, one very Euro looking Asian male, and one brown skinned male who plays a "Demon Soldier". Maybe this series should take place in future Sweden instead, though Sweden is currently more diverse than this cast.

Well, if the show was made up of asians, it would be a weird gameshow of schoolgirl dressed girls and geeky men eating strange foods and falling over.
If it was made up of African-Americans, it would be an American comedy sitcom full of loud obnoxious people swearing a lot and taking the piss out of each other, usually with the 'mother' wacking the men over the head a lot.
So I don't mind this one being a bunch of whities.

Obviously you have no concept of skin color distribution. It has been thousands of years since the fall of humans. Mass travel is gone and has been gone for thousands of years. They are in what is now considered the pacific Northwest in the Seattle area. Without travel happening, the skin color of the people in that area over several thousand years would start to change to fit the area.
Now I will concede that this is probably not what they were thinking when they cast the show, but it's a semi-realistic idea of what that area would look like if travel stopped and we peeked several thousand years into the future.
And one last thing, the title sequence makes it seem like the human race split and evolved into the trolls and elves and ogres or whatever. I don't know if that's true, but it would be interesting...
