I was listening to favorites this evening at dinner and I have several, but I think the most beautiful piece ever composed for a movie has to be Gabriel's Oboe from The Mission. If heaven has a sound, it has to be that.
Other favorites are the themes from Legends of the Fall and Out of Africa.

Likewise, the opening theme to Cannibal Holocaust is simply beautiful and serene and puts the viewer at a false sense of ease for the horrors to come...beautiful use of music by Ruggero Deodato!
I'm not a huge fan of jazz, but I will add Elevator to the Gallows (1958) to this list. The score makes the film and was mostly improvised.
