There's an alternate ending where they avoid the iceberg and Jack throws Billy Zane overboard.

The wreck at the start could've been a red herring. Just like the moon landings, the sinking was FAKED.
I was expecting the film to end with them discovering the real Titanic hiding in the North Pole with Jack still alive and captain of the ship, with loads of grandkids from all the third class passengers he banged.
I guess they're saving all that for the sequel.

But to answer your main concern: Marty advised Doc to take necessary precautions.
Doc didn't want to change too many details of the night in question as he knew the time loop needed to be kept intact.
The events at the Mall had to take place to ensure Marty went back to 1955 to warn Doc about getting shot.
Ergo Doc did everything as before but this time wore a bullet proof vest.
I always interpreted it as Marty simply happy to find/confirm that Doc Brown lives in the town and can help Marty.
However, because he uses the word "alive" it suggests he's also relieved after previously seeing him killed.
