Why didn't he just shut the servers down again lol? instead he tries to have the buildings crush him slowly, uploads a new NPC to fight him (why not send your employees in as players?) and then finally hacks at his own servers with an axe instead of just shutting them off which was already shown to work before... like what?
Spoilers: The axing scene was ludicrous, it would be enough to wipe/shutdown the servers. In the real world, game servers aren't even in the same building. But it was part of the "magic" they did to get the movie going, like making Guy remember everything or his friend reappearing at the end. If you're nerdy or too logical like me, you wouldn't buy it. A better, more believable choice would have been to reveal a cloud backup server at the end, with a prior "state" of the game world.
He'd need to shut them down AND wipe them to hide the evidence. Guy had already proven he could survive a reboot.
The axe was faster -- Antwan was hiding evidence of actual theft, after all. For all he knew, Millie and Keys could call the cops on him before he could wipe the drives
