In the last 2 movies, the Hulk has been played down to a mild-mannered Clark Kent. He should've been out there in Berserk Mode in the final battle against Thanos. We were robbed.

A little more of Nick Fury would've been nice. I know there's a lot of characters to squeeze in, but his cameo at the end wasn't enough.
I'll try to summarize what I've heard...and its basically that The Hulk needed to be played with some. That some people felt audiences would tire of seeing Hulk smash...because that's all the Hulk really does. Its supposedly the lack of variety in his abilities that led to his being nerfed some, out of fear of people growing bored with him.
I'm not sure how true that is, but it does make some sense.
As for Thor...he lost his Dad, Mom, brother, his homeworld, he's lost everything and had been blaming himself for not going for the head. Yeah, he's frigging Thor, but...I think I'd rather him be humanized to that point rather than him being able to just stoically go about being a badass hero, you know? Its part of bringing these characters to life, IMO.
Hulk, Cap Marvel and Thor had to be removed so the Thanos fight becomes more than just a superhuman punching match.
Also, the focus here is to try to make all the heroes as human as possible. This means eschewing super-stuff and concentrating on them as characters with feelings, needs, etc. No Iron Man suit... Thor depressed.... Half Hulk.
I't didn't have to be a punching match. They still should've thrown him in, at least for a minute or so.

I actually liked him until the film forgot about him for the final battle. That was unfair to the character.

I don't care about the actress or the character she played either way. I'm commenting on the fact she got knocked out of the fight with Thanos and that was that. You can't comment on a scene in a movie without hating a character? No, I am describing what happened, same as if Thor or Black Panther or anyone were in that situation. Dude, the Hulk was the one who did the bulk of the work to make time travel possible, and then snapped everyone in the universe back into existence. Plus, he held up the entire Avengers compound on his shoulders, in a scene very reminiscent of a classic moment in the Secret Wars, and saved the lives of War Machine and Rocket. He was badass in this film. He wasn't a single-minded rage monster as in the past, but that's good story-telling-- characters grow and change. The Russos were incredibly clever in how the handled the Hulk, allowing him to play a crucial, heroic role in the film, while never resorting to "Hulk angry! Hulk smash!"

Captain Marvel, a female, was held back (shit on) just like Thor.
Gamora and Black Widow are both permanently dead, like Iron Man now. Two women removed from Avengers, one male removed.

I was a little disappointed we didn't get a scene of Hulk/Banner summoning up his inner monster for one last beatdown with Thanos... But in a movie so packed with stuff I'm not surprised they didn't find room for it. He did get his big scene with the gauntlet... But his MCU story arc may not be over yet. Maybe he will go to work in Wakanda, now that Suri is back, and reappear in the Black Panther movies... or something. You never know.
Maybe they did go a little far in rubbing it in with Thor... But he did have his redemption, he discovered he was still worthy, had some badass battle moments and was back in good spirits by the end... They didn't do a Luke Skywalker on him or anything!
