I think it must be quite a challenge to tie up loose ends and write a satifying ending to a long running series solely because it hardly ever happens. The final shows for Seinfeld, Roseanne, Lost, Sopranos all disappointed their fans. 24 was Ok...are there any others?

As for finales my list for TV shows is short:

Deadwood (even though I'm disappointed with the almost-cliffhanger ending, life goes on in real life so that's why I make this show an exception)

Liked Star Trek Voyager's ending, they came home. 24 and The Sopranos are on my go to see list but because of a lot of other things in my life i like to relax with some reruns and shows like The Wire, Breaking Bad, Dexter, are getting me hooked, ha ha. They ruin my weekend because i keep watching, ha ha.
Still have to watch the final episode of Southland, and the final season of The Shield. Both shows i liked but never wanted it to end, so i save them.

Buffy - I didn't like the last season so much, but the ending was really good and fitting..

Firefly - I consider the movie Serenity as its finale.. Pretty darn good...

Dollhouse - The last season went completely off its original premise..
Prisoner Cell Block H - The main villain who'd been on it for years was defeated so easily. It was a cop out..
The Practice - Again they took the whole premise of the show to a different place and really hated the final season... It was written to promote Boston Legal only..
United States of Tara - Too rushed and contrived... It was too hard to devise an appropriate ending so they made up some stupid storyline...
