When did it go downhill?
I never thought the show was anywhere near as good after the revivial, but I wouldn't say it really started to go downhill until season 7 or 8. 9 and 10 are just bad and anything past season 11 is just unwatchable.

IMO, Family Guy has been hit or miss from the first show on. At times, unwatchable and at times brilliant. But I haven't noticed any change from that pattern yet regarding seasons.
Simpsons was brilliant to season 10, pretty good through 13, and some watchable episodes even up to 15. It's been unwatchable from that point on.
The pattern change is in the "cut to scenes". ive watched a video of someone doing the aggregate math on each season and number of cut to scenes and theres almost a direct correlation between their rise and lower viewers.
ive notices though however the cut to scenes have increased in quality. they are no longer "look how ridiculous this is the joke is in how silly it is". instead they actually try and make good jokes in them.
im finding the exact opposite. gave up on it for years then now watching season 18 on.
they've toned down the ridiculousness of the "cut scenes".
the cuts are happening less often, are actually funny and make jokes. the joke isnt how ridiculous "the cut is". like saying "remember that time me and Thomas Edison raced in the datong 500 ". where the "joke" was supposed to be "look how silly this concept it".
that was never funny. But in Season 18 episode 20 theres a cut to Stewie as a lawyer in the Salem with trials. and the joke actually lands that hes supposed to be this puritan prosecutor.
