For me, hands down, it's Blazing Saddles. YF is probably the more artsy of the two. It's more structured and controlled. It's a good movie.
But it doesn't have the gut-busting, laugh out loud moments that BS has.
Tough choice. They are both fantastic.
I'd say that Blazing Saddles is the better movie, while Young Frankenstein is the better film...if that makes any sense.

Young Frankenstein seems to have more hits than misses as compared to Blazing Saddles. Both great films though.

That comparison, for me, is SO close! But YF wins. You're asking me to choose between two of the funniest movies EVER MADE, after all, but I give the edge to YF because it's such a brilliant spoof.
That being said, I consider BS to be the fearlessly-funnier (Gene Wilder trying to wipe the 'black' off of Cleavon Little's hands) of the two films.

Blazing Saddles is more slapstick. a lot of the jokes in Young Frankenstein is a more cerebral type of humor.
