"you know what's the matter with you?"
"no, what?"
"NOTHING."
There are so many good lines. Personally, my favourite is the way Audrey says "I love you" twice over at the end. She put so much feeling into it. :o
share"...I've got liverwurst, liverwurst, chicken or liverwurst."
I should say we are spoilt for choice for great lines in this film - I just like Walter Matthau's delivery.
On your train of thought, I think I just caught the caboose.
Hepburn: Can you recognize heroin just by the taste?
Grant [tastes it]: Heroin!... Peppermint-flavored heroin...

LOL! This is a great, great thread. I love all the quotes that you guys already stated. If I could, I'd post all my favorite quotes from the movie, but that would take up FAR too much space, lol.
Nevertheless, here are my favorite lines that I can't get out of my head:
On the boat, Adam says, "Well, when you come on, you come on."
Reggie replies, "Well, come on."
After she learns his real name and she realizes what he said (about the marriage license), she says, "Marriage license? Did you say marriage license?"
Brian says, "Now don't change the subject, just give me the stamps."
Then she hugs him and says, "Oh, I love you Adam, Alex, Peter, Brian, whatever your name is. Oh, I love you. I hope we have a lot of boys and we can name them all after you."
While smiling, Brian replies, "Before we start that, may I have the stamps?" But then she beautifully kisses him and he beautifully relents, kissing her back.
And... ah, such a classic, beautiful ending to a classic, beautiful movie.
"Let every man be master of his time." -- Macbeth by William Shakespeare

A very similar "I might as well give in" kiss, with another Hepburn, occurred at the end of another favorite, "Bringing Up Baby", preceded by an "Oh, well. . ." by Grant.
I loved his line, in the shower, about his water-proof belt, ending; "Proof-proof". He was great at being totally silly. I bet he was great with little kids.
"Of course, you won't be able to lie on your back for awhile... but then, you can lie from any position, can't you?!"
Do you like having sex? Then DON'T buy a Nintendo!
"I don't bite, you know...unless it's called for."
shareReggie: "I always liked this room. Charles never saw it...only the things IN it. I think I prefer it this way..."
Stamp collector: "And don't forget these, madam."
"Thank you...I'm sorry..."
"That's all right. For a few minutes, they were mine. That is enough."
Reggie: "I'm not hungry any more, isn't it glo-o-o-rious!"
