Some good lines there, but I think the creme de la creme has to be one of Eli Wallach's lines from The Good, The Bad and The Ugly:

"You're the son of a thousand fathers and every one of them is a bastard like you!"

Cracks me up every time, that one.

Harmonica(Bronson)is about to face off against 3 assassins with horses who have double-crossed him.
Assassin: "It looks like we're shy by one horse".
Harmonica: "No you brought two too many".

There are a ton of quotable lines in it, but the delivery made them My favorite was by some of tertiary characters

Chamlee: There's an element in town that objects.

Henry: Objects? Objects to what?

Chamlee: They say he isn't fit to be buried there.

Robert: What? In Boot Hill?

Henry: Why, there's nothing up there but murderous cutthroats and derelict old barflies, and if they ever felt exclusive brother, they're past it now.

I didn't even care for westerns and still loved this.

Some of those are good but all pale compared to:

Harmonica: And Frank?
Snaky: Frank sent us.
Harmonica: Did you bring a horse for me?
Snaky: [Chuckling] It looks like we're... it looks like we're shy one horse!
Harmonica: You brought two too many.
