I think my favourite soundtrack would probably be The Lost Boys.
And thinking about it... tied with The Power of One.
For a traditional, instrumental score I'll go with Star Wars. Not a real interesting choice, but John Williams really killed it here. Much of the music has become part of our culture. You can hear it and instantly connect it to a scene or a character.
For a soundtrack, I'd choose Goodfellas. Scorcese is so great at finding the perfect song for a scene.
