I don't have any long running series that I really find bingeworthy. They tend to be a little inconsistent over time with some episodes better than others. But for the shorter television mini-series format I would include the following:

Middlemarch (1994) - seven episodes
Pride and Prejudice (1995) - six episodes
Wives and Daughters (1999) - four episodes
Band of Brothers (2001) - ten episodes
Bleak House (2005) - fifteen episodes
Jane Eyre (2006) - four episodes
Wolf Hall (2015) - six episodes
Belgravia (2020) - six episodes
The Queen's Gambit (2020) - seven episodes

In Treatment (2008) - just the first season which was a mammoth forty three episodes long but some of the patients won't interest you while others will have you on the edge of your seat.

Band Of Brothers and The Pacific are both very rewatchable, good call

I watched Band of Brothers in one day. Maybe the best mini-series I've seen. That or Lonesome Dove.
It took me longer to watch Bleak House (maybe a week) but that was surprisingly entertaining.

Wives & Daughters, Band of Brothers and that Jane Eyre adaption were nearly perfect TV. Mini-series are severely underrated media and need to come back to major networks. I hate giving a chance to new programs only to have them cancelled on a cliffhanger episode.

1. Arrested Development - the first time I was watched this series, which was at the time the series ending episode in season 3, I went out and bought the first two seasons and watched every episode I could over a weekend
