MC was placed on the back burner during Irma. I'm in Katrina land now. I look out the front window and there's the Gulf. The same Gulf Katrina used to bring a 32' storm surge and take out every structure along the Mississippi coast. Needless to say my eyes were glued to the tv with back and forth phone calls & texts to family in Florida where Irma decided to go over. We also were fearful of another Gulf storm heading this way.

Cat, you were wise putting your trip on hold. The casino hotels here in the Biloxi/Gulfport area were full of evacuees. They were driving to all points north. Besides being glued to the tv I was working with two hurricane sites I've used for years. The forums kept me informed with updates including the chats about people not being able to find rooms. Florida had over 200,000 in shelters plus the 6.5 mil who evacuated. Some left the east coast to go to the west coast only to be caught in the storm and couldn't return.

Eight nursing home residents died due to the heat...no generators! I think most people lost power. My daughters evacuated;one spent the night in a closet under the stairs. All is well for them now. The Keys & SW Florida are the ones hurting as well as Jacksonville due to storm surge.

When Irma left I was busy working with my printer...damn thing won't print black! And all new cartridges. Then the DW went haywire...error message. Tech came today and of course it behaved!

But, no deep complaining. Not with what Houston and Florida just went through. I am blessed!

BTW, Cat, I did it again. I made a full 9 x 13 pan of mac & cheese for two people! Sometimes I wonder about myself....

My in laws stayed in Naples and did ok too

That it is...one big sweatbox! And it's always worse after the storm. I recall after we went through Charley, Francis and Jean (Ivan veered north to the panhandle) it was pure misery. The humidity was stifling. I suffer from allergies and severe migraines so by the third day without power even with a fan powered by the generator I was physically ill. Later I purchased a portable AC to cool the master bedroom where I planned on staying when the next one came. I have such empathy for those going through the nightmares which hit Houston & Florida. My home wasn't damaged or flooded in the 2004 storms like the poor soul's were in the recent storms.

I swear I cannot prepare less than what I do! It keeps growing and growing. For two old farts like us...a fully loaded 9 x 13 ceramic dish. I can hardly lift the darn thing to put into the oven. And do I use the cheese. Lots and lots of cheese....with a healthy dose of Tabasco. I also have changed from elbows to mini penne. We seem to like it better. It's a good thing we do because there is a lot of mac & cheese in the kitchen...🀒

I hear you.

Somethings you make it's impossible to make them for less.
Mac and Cheese, Chile, Spaghetti, Beef Stew or whatever.

You are so used to making it one way for so many years it's not worth it to try to figure out
how to make it for just 2 people.

I make a baked mac and cheese that could feed 20 people. I don't know any other way.
Usually enough to fill up two huge "turkey pans" that I put in the oven.
I always end up making sure everybody who comes over goes home with some or
take it somewhere.

Now, thatsa lot of mac & cheese! When we lived in Florida I could share it with the family, but here on the MS coast there's no one around. Which reminds me I went through my closet for clothing and shoes to take to the Salvation Army. Most of the clothing could be sold in the thrift store...hardly worn. I wish I could get it to Florida, but I just drove back from there last month.

I'm sure there is somebody in your area taking donations for this catastrophe.

I helped load up a truck today full of donations. From clothes to dog food and everything in between.

I will check tomorrow. When Andrew hit Homestead those of us who collected took the items to designated sites where it was loaded onto trucks for Miami. The FL Turnpike & I-95 were closed at a certain point going south to general traffic.

The 2004 hurricanes devastated our area. My daughter and I bought pet food and delivered it to Animal Control. We offered to foster, but were informed they were fully staffed. Poor critters there are in open kennels outside...no AC. Here in Gulfport, MS the Animal Control/Adoption Shelter has AC and very clean.

That's the bad thing.
We loaded a truck full of supplies without knowing if it will ever actually make it to those
who need it.
Reminds me of the Katrina fiasco.

The animals are always a sad story.
Last I heard my area was not being called upon to take the pets.
I hope that means they are being taken care of.
We are a no-kill state and people here are very generous when it comes to animals.

I like making mac and cheese coupled with tuna fish, a real taste treat !

Interesting.

I'm not a huge tuna fan.
I've found recently I enjoy it if it's made on the grill.

I've made mac and cheese with pulled pork and turkey but never tuna.
Is it canned tuna?

Yes, mac and cheese is one of those quick and convenient comfort foods. I'm currently eyeballing a pulled pork recipe. You've just given me a new angle.

Last Thanksgiving This is what I made.

I made a white and yellow mac and cheese.
One with pulled pork one without.

One topped with Frenches French Fried onions and the other topped with Ritz crackers mixed with butter.
Added caramelized onions and various other things. So good.

You add pulled pork to your Mac & Cheese? Strange. I love pulled pork, but separate from the M & C.

Wow! We just had someone pounding on our front door! Whoever it was had to enter our front porch screen door. My husband grabbed his weapon, but by the time we got to the door no one was there. We turned all our outside lights on and noticed there wasn't a vehicle. I told my husband to call the police. I was so angry I went downstairs yelling at the person just in case s/he was still around shouting that I had a weapon (which I had left upstairs)! I know...it was foolish, but darn it!
Anyhow, when the officer arrived he informed us they were on the lookout for a guy in the area who was high on something. All is well for now.

When I became aware of the nursing home deaths, I was somewhat dismayed. I was at my mother's deathbed in a nursing home. While watching the coverage of all the preparations, I felt those in hospitals, nursing homes, prisons, should have been high priority evacuees. I do remember one report about hundreds of prisoners being evacuated overnight in one area.

So sad. Why the home didn't have generators is a big question. Did you see the Houston photos of nursing home residents sitting in water...some up to their waists? It's been a bad year here in the states and the season isn't over until Nov.

Happy to hear you are OK. I cannot imagine going through a hurricane, whether staying put or evacuating. I lived in Tampa for two years (eons ago) and just could not adjust to the oppressive humidity. I live in the upper Midwest now and a few years ago we had a bad summer storm that knocked out power for four days - it was miserable - and I can't imagine having to deal with possibly weeks of no power, no AC, not even a fan!

At my age, if I lost everything like so many folks have, I think I would just lie down and die. I can't imagine having no home to go to. Everything you know is gone. I truly don't understand how people cope. I really admire their strength.
