Egg omelettes


We had Egg omelettes today. She sauteed green onions, spinach and mushrooms. She beat up some eggs in bowl and poured over green onions, spinach and mushrooms. When all most done she topped with shredded mozzarella cheese. It was outstanding!! How do you make your Egg omelettes and what do you put in them?

That omelette does sound good.

My standard favorite is diced onions & American cheese.

But if I feel like a change, I'll add diced fresh tomatoes and/or chopped bacon.

I also love Western Omelets, if I am in a diner. 

...I sizzle some sliced mushrooms and ham. Then add stirred eggs over them in the pan and cook until nicely done. Occasionally, I'll add some shredded cheddar cheese...

My favorite way is to put sliced Velveeta inside the omelet and mix chopped green onions with the egg before pouring it in the pan. On the plate I'll cover it with some green chili salsa.

That sounds great! I love omelettes. I make mine country-style, with omelette folded in half with the fillings in the middle, and the outsides slightly browned. Favorite fillings include: mushrooms, spinach, shallots or caramelized onions, smoked salmon, crab, ham, and goats cheese, cream cheese, or cheddar. Basically any combination of the above is delicious.

I also love Western Omelets
This looks delicious. Looks like it has diced tomatoes, green pepper, ham, onion and cheese.

I take mine over easy but occasionally I'll make myself a chorizo and tomato omelette.

I thought that an omelette was the eggs cooked separately and then folded in half over the filling.

What you are describing sounds more like a frittata with the egg mixed with a cooked "filling."

Both are great. When we make frittata it's mostly "stuff" with the egg being used more like a binder to hold it all together. With an omelette, it's mostly the egg with some added stuffing. At least that's the way i've always known it.

Do omelettes vary by region?
