Hidden gems is hard, but the two that come to mind the quickest;
Friday Night Lights
Firefly
firefly is surely fantastic. i heard about FNL lights, but it did not sound that interesting to me. is it really worth it?
shareFNL is really good Drama. The football is just a backdrop, the show is about life and relationships. Season one is probably a bit long season 2 is hurt by network interference and the writers strike, but season 3-5 are easily some of the best network TV has to offer.

as for maxx, i still have to check out the full comic series.
community is awesome and aeon flux is insane. wasn't it first shown within liquid television?
Freaks and Geeks...it was said to be the best show that no one watched...except for a few of us fanatics!

Black Books is good. Not really a hidden gem in the UK but in North America a doubt it's well known.
Not sure if all these apply, but I don't think they are very mainstream.

i gotta check out some from your list, but so far i can agree on dead like me, the sarah silverman program, tremors and most of all black books. i gotta admit though, that the sarah silverman program had it's run and made it as far as the format could be pushed.
and i agree, in terms of the US "black books" is surely a hidden gem.
If you like Stephen King, then I would start with Kingdom hospital. You would know in the first episode whether this show was for you and it's only 13 episodes or so. Sort but awesome like Firefly. It's dark yet funny.
If your looking for just funny, Don't trust the bitch... Another one that's easy to tell if it's worth watching through in the first episode.
