As someone that has been seriously studying folklore, including urban myths and ghost stories, most of the early creatures have roots in folklore of the Appalachians. I own a 7 volume set of reference books covering American mythology and a large chunk of those pages are dedicated to monsters.

I'd like to see:

The lost settlers of Roanoke Island
The Hidebehind: Nobody knows what they look like because they're always hiding
The Hodag: A creature that has one side's legs longer than the other, they live on mountains and hills, they graze in one direction
The Jersey Devil: Mrs. Leeds 13th child
Road trip to Bermuda Triangle
Skunk Ape
A Wholly Mammath
There's a Howler in Arkansas
