shareShe had been trained as a seductress, to be detached from her emotions to extract information from men of foreign governments by sexual acts with them. She performed what she was taught on her uncle. He reciprocated. When he did so she stopped proceeding. I felt she did this to show him how well she learned her lessons, and also by him reciprocating he exposed himself as a nasty fellow/creep.
To get a better understanding I would suggest reading the scene in the book.
This is only my take on the scene, I did not give it much thought, other than what I surmised above.

Also. Her mother says something along the lines of “the way your uncle looked at you when you were a little girl - I did whatever I could to keep him away from you.” Maybe he’s not a pedo, but I have a feeling he couldn’t wait until she grew up and matured.
shareIn addition to the answer above, I think it's there to make the audience feel uncomfortable and repulsed as we have spent the better part of the movie by that point gazing at her body and enjoying her sexualised situations...
It's as much a reality check for the audience as it was a taunt to her uncle...
