I was lucky enough to catch a super advance screening! It was mentioned that they are still working on it, so some of the scenes might be added/removed.
I thought it was better than KFP2. The animation was fantastic, especially the Spirit Realm (you'll know when you see it). Story was simple, kinda was hoping to see some more development. Runtime was quite low, around 1 hr 20 mins or so. It was entertaining though. I would give it 7.5/10

I've read the novelization and I can answer your questions:

She is dead. There's a brief scene with Li reminisces about her with Po.

The rumored storyline about an arranged marriage is false. Mei Mei only has the ribbon dance scene and that's all. She is only a background character for the rest of the story and has almost no involvement nor importance in the story.

The Soothsayer does not appear in the story at all.

Not in the book. Li has a brief scene with Po where Li reminisces about her while showing Po a picture that's in a shrine for her. That might wind up different in the film and she may be given a name for all I know.
Do Mr Ping and Li get along, or is there a rivalry?
Ping is a little wary of Li at first, and he has his reasons- mainly that he's afraid to lose Po to his birth father. Li harbors no animosity towards Ping at all. Quite the opposite as he gives Mr. Ping a big hug for taking care of his son all these years.At one point later in the story Mr. Ping eventually accepts that Li is important to Po, and consoles Li when Po is angry with him (another spoiler itself that I won't say unless you wish it) and Mr. Ping says "Your son got mad at you. Welcome to parenthood."
Is there any interaction between Li and Shifu or the Furious Five?
Yes to both- albeit briefly. Po introduces Li to everyone at the Jade Palacebut then the introduction is cut short when Kai's jade zombie minions attack.
Keep in mind that things may play out differently in the final film- not every gesture or facial expression is mentioned in the book.

What exactly was Po mad at Li about? I can't imagine Po getting mad, unless somebody threatened/insulted people he cared about.
Mr. Ping isn't using "mad" as in infuriated or angry, but as in very upset and disappointed.
A quick summary without even further plot spoilers is that Li lied to Po about having knowledge on the power of Chi- which according to a scroll written by Ooogway is the only thing that can defeat Kai.
I had originally a much lengthier summary that was damn near a spoiler for half of the story elements. No doubt my quick summation will leave you with more questions, and if you're eager to ask then feel free to do so. Just remember to use the spoiler tag for potentially story revealing questions for the sake of others.
