He (Matt Damon) actually questioned that when he was in the hospital, but they said it wasn't that simple.

They said in the hospital -- it's very hard to get a cure from someone's blood.
It was also a virus that was continually changing. They were dealing with mutations. His strain was different to the strain that appeared later on.
I'm afraid the "get a magic curing serum from a naturally immune person's blood" is more of a sci-fi trope than a realistic one.

Other than that I liked a lot of the film and the exact explanation of the virus's origins at the end.
