Well, they do a good job of "uglifying" her(I suspect a fat suit is involved) and it is in keeping with the character like some people have said. But a lot of girls like Alex really blossom in college. They could have gone in that direction, but they have made her even more frumpy. If they allowed the actress to be "hot" on her show maybe she would feel less compelled to constantly appear in thong bikinis on social media (assuming that's really her).
I get annoyed when they constantly cast pretty girls in frumpy roles, but since she was 11 when the show started, they couldn't really fire her for becoming hot, but they don't HAVE TO make the character like the actress either.

Considering the fact that there are many, many young women who "constantly appear in thong bikinis on social media" and aren't in the same job situation as Ariel, I doubt that there's a correlation. It's a millennial thing, not a "I have to be sexy on social media because I'm not sexy on television" thing.

I doubt that there is a lofty, ideological purpose behind Ariel sharing sexy photos of herself on social media. Countless other young women share similar photos. It's just a common, popular trend among millennials.
And this season they are giving Alex almost nothing to do. "Let's put her in nerd glasses (not the sexy kind) and frumpy, over-sized clothes with drab, muted colours and have her stand around on the edge of the action looking annoyed." They need to either get rid of the kids, or give them a reason to still be around. "We know Ariel is sexy but that cannot be included as her character." Here's an idea: Have Alex blossom into a man-trap and turn Haley into a loser. Many possibilities there since Haley is dumb anyway, and dumb attractive people who were popular when they were young, are always revealed when they get older as empty, and with fewer prospects. More story ideas there. You're welcome, writers.

It doesn't matter what she looks like. She is so self-absorbed and self-impressed, and her personality is so abrasive, that no one could possibly like her or want to be around her, not even her own parents and siblings.
