I was pretty sure he was lying when he said that. By that point he knew he had to move on and make things work with Veronica, so he spared himself and Celeste more pain by just lying that he loved Veronica. Of course he didn't...
....but that's what the movie was all about. Moving on. Closure. Taking responsibility. Acceptance. Growing up. He may even tell himself that he loves Veronica without meaning it.

I agree with you.
I totally agree w/ thee eyez also, I think he was knew he had to grow up and even though he probably did not love Veronica, he was gonna take responsibility. Later in years, he will regret this, if he truly does not love her and will probably gravitate and or become closer to Celeste if problems arise, but I agree that he seems to be growing up.
