If they thought she couldn't beat the dragons they wouldn't invest. So perhaps they have something to offer. We know euron got the horn in essos in the books.

Banks find ways to profit no matter how things go. If the economy is booming they make tons of money, if the economy tanks they make tons of money. Every bet is hedged. The major dent in the slave trade will have opened up opportunities elsewhere. I doubt they've actually lost money - even if everyone else involved did.
The Iron Bank has no competition of remotely its own size, it is the Wall Street of Westeros and Essos, and financial institutions don't generally take sides. Not really. In fact they have a tendency to invest on both sides of a conflict so no matter who wins they're on good terms with the victor. And if you are dealing with both sides, war is always lucrative - dragging it out is preferable to having it end quickly. I wouldn't be surprised if another representative of the Iron Bank showed up offering Daenerys their assistance as well.
Keep in mind, they don't yet know about the whitewalkers and the army of the dead. I'm sure if they find out, they'll be back at Cersei's doorstep asking her "Are you out of your fucking mind?". Well, maybe a little more courteously around Ser Gregor. This bank, like all banks, is on no one's side but their own. And crazy gambles with a potential apocalypse looming isn't something the self-serving can relate to. How are you supposed to enjoy all your wealth and power if you're dead?
The Iron Bank doesn't know about the Others, but what would happen if they did? What if Tyrion Lannister, former Master of Coin, brought a couple of wights to Bravos and asked for enough money to feed and arm the armies of the living?
I think that if the Iron Bankers ever realized the scale of the problem, they'd refuse Tyrion a loan, as well as Cersei and everyone else in Westeros. They'd stop lines of credit and demand all loans be repaid, and so what if that cause the economy to collapse. They'd assume that since Westeros is doomed and Essos is safe, all they could responsibly do is move all their investments to zombie-free zones.
It would depend on whether they believed they'd be safe. After all, The Wall was impenetrable. There's no way the dead should have been able to get by it. Are they going to stake their lives on salt water protecting them forever? Because if there's any time the Night King can be defeated it's right now. Once he occupies Westeros all the rich folks behind the Iron Bank can do is cross their fingers and hope he's satisfied with that. If this winter is long and cold enough (which it probably will be) the Narrow Sea is going to freeze over, allowing the dead to cross. Just like the English Channel and the Mediterranean would freeze if we had a five year long winter.
