Same with how for instance "House of Sand and Fog" (2005) also didn't have a house built on sand and fog.

Actually, YES he DOES stop, and he doesn't even garden that frequently either, mostly, it is limited in this film to him watering the plants. The title is meant to be metaphorical I believe.
