Hang On, What Girlfriend? (Possible Plot-hole)

At the scene with the strippers and Kevin, he briefly states that his girlfriend wouldn't like it or something along the lines. Point is, he said he has a girlfriend but then it was never mentioned in the film again. Who is she and when did they meet?

Thought the same thing.

I remember watching a making of feature where the director pointed out that he wanted to make it very clear that they all have grown on their own and have their own lives in between the movies. It's also the reason why OZ and other characters weren't able to make the movie. I liked that they mentioned the girlfriend in passing it adds realism to me.

Not every single detail needs to be fleshed out in a film. Mentioning his girlfriend was enough.

It happened off screen and his friends would already know so no need to have a scene of dialogue discussing it

while it doesn't need to be fleshed out, it's a bit weird that she wasn't at the wedding as Kevin's plus-one. All they had to do was show him dancing with a girl at the wedding reception (who, with no lines, would have just been another extra so it wouldn't have cost any time or money). It just seemed like lazy, clunky exposition, kinda like the "law school" line mentioned in another thread

Knowing Kevin, he was probably making it up so his friends wouldn’t think he was lame.

Apparently in the commentary Thomas Ian Nicolas said he had a girlfriend, and she even shot a scene or two, but the scenes were deleted.

If you look during the rehearsal dinner scene though she can be seen sitting at the friend's table. You can see Stifler, Finch, the milf guys, Kevin, and his gf sitting next to him.
