Fried Gator is really good. Its a bit tougher than chicken, but the flavor is really good.

If you go to some of the chili competitions, you can get chili made from/with gator, shark, rattlesnake, bison, goat and more traditional types. Some of the big cook offs have a winner in each category.

BBQ cook offs work with the traditional items like chicken, sausage, brisket, ribs, beans, and add a 'novelty' category that I have seen including shrimp, goat, and too many others to mention.

The good news is how they all taste good, and there are some very different versions of BBQ and chili, with some varieties more my favorite than others.

Gotta try 'em all!

I'm from Louisiana and have tried gator at lots of different places, but I just don't care for it. Too chewy. What's GOOD, though, is frog legs. OMG YUM!!!! I suggest anyone to try them if they get the chance. Squirrel sauce piquante is awesome too, but I've only ever had that at home. Fancy places in New Orleans might serve it.

I've gator before. I liked it. Personally I think it tastes more like fried fish than chicken.
