ARE YOU *beep* KIDDING ME!? The Thing's effects were and are STILL top notch, but you aren't satisfied and you want MORE? The special effects can't get any better! You better not mean CGI. Give me a *beep* break.

Hands down: the ending of "No Country for Old Men." I love endings where they don't dumb down and spell everything out.

To go more classic we could add Planet of the Apes and Psycho. The ending to Requiem for a Dream still freaks me out.
