One that comes to mind would be "The TV Set" which follows the making of a TV pilot.

shareSupermen of Malegaon--it's a little out there but it's a documentary about a group of amateur (VERY amateur) filmmakers in a little town in India, trying to recreate their own version of Hollywood's "Superman". They run into about every problem you can imagine and it's a pretty hilarious but inspiring movie about the passion people have for filmmaking.
