Because Phil Connors became a changed man at the end. Quentin thought that was inconsistent and betrayed the film's trajectory.
It's funny because it's not like Beatrix Kiddo changing character from a ruthless assassin to a doting soccer mom is any more consistent either😆
Beatrix didn't change. It was clearly stated she was and always would be a killer.
