What should the restaurant manager have done?


What was the best course of action for the restaurant owner? Should he have just kept serving them and put everything on Tommy's tab, and not worry about the money? Or let's say he asked for the money, and the original outcome of Tommy attacking him occured. What should be have done then? Would apologizing to Tommy at a later time have worked, and clearing his tab completely as a sign of respect, would that work? What could be have done to get Tommy to back off at that point?

I think he should have kept his mouth shut at that moment, and gone to Paulie to “reasonably” suggest that he can’t stay in business with Tommy bleeding the place dry.

However, he’s kinda fucked anyway, because Paulie doesn’t really care anyway. But if it was my joint, I would play it up to Paulie that it’s a joint worth having around in their social circle, and that it would be a mutually beneficial arrangement to pay off the debt. Hehe…it would probably be a shot in the dark, but I’d go in that direction if I was painted into that corner.

This. You are screwed when your clientele consists mostly of wiseguys. They did not get to where they are by paying all their legit bills plus debts.

Its a plot hole. No sane restaurant owner would ask a mob boss to be his partner

How can you just keep running tabs as an owner when your suppliers, labor, utilities, etc. expect you to pay ON TIME! Most clubs and restaurants do not run that kind of profit margin. One reason the authorities come down on protection rackets as they bleed a community dry in a hurry.
