What was Logan doing on the tape recorder? (Spoilers)
that made Sarah react in disgust and throw the tape recorder across the floor? I didn't quite get it.

However, I'm watching the film right now and I'm sure he says something about stockings. In fact, I think the last thing he says before Sarah switches the tape of is something like, "I want to wear the stockings Mother."
Anyone else get that?
Indeed he is babbling about stockings. This is what I can make out, and it sound like he's having an argument using the voice of his mother, himself, and possibly father.
"(unintelligible) father stocking, it's my stocking"
"There, I've put it away"
"I've put it away mother, I've put it away!"
"Bastard!"
And then it seems to go back to present time with "work" in the lab. Here it sounds like he's beating a zombie as to make it behave civilized. This is what I can make out, while you hear zombie groans, and what sounds like some kind of physical abuse.
"Be civilized! Be civil!"
"Take That one! Take that one! Take that!"
And then it goes back to the mother/father rant.
"5 minutes mother, just 5 minutes!"
And before it ends, it continues with some more crap about fathers and mothers stockings, but it not easy to make out.
Let's just say the doc had some serious issues.
