I thought John Candy didn’t become a star until later in the decade, with Uncle Buck and Planes, Trains, Automobiles etc

Was he widely known when this movie came out?

Yes. He was in The Blues Brothers

He was also in Stripes.

"Widely" can be debated, but before Vacation, he was in 1941, Blues Brothers, and Stripes (among high profile films), and was on SCTV for 4 years.
