Surely that tainted blood, in the blood test scene, would have infected MacReady?

The Petri dish holding the blood samples was in his ungloved hand when it leapt out.

And the other guys tied to the bench would have been infected by ''Palmer''?

Don't know about that, but taking blood sample with the same scalpel/knife (just wiped to a trousers in between) wasn't very good idea, I think.
