Deputy Gault was using a lever action hunting rifle to shoot at Rambo when Rambo was on the cliff side, which Rambo then picked up after Gault fell out of the chopper, but where did Rambo get the fully automatic gun (M16?) that he used against the National Guard at the mine entrance? Was that one of the guns the deputies were carrying?

Yes. He took the M16 off one of the deputies during the night ambush in the forest.

In retrospect, he should have picked up a couple of mags from the deputies he ambushed.

Rambo had just enough ammo to stop the national guardsman from entering the mine shaft and killing him. That was the main thing, keep them at bay and make them think he's got more M16 mags.
