How could an animal have survived in a crate since 1834?
I know it's fictional, but even fictional animals usually obey the laws of nature to some extent.

shareIt was Chuck Norris.
shareIt's not a normal animal and something supernatural. The ending clearly suggests it cannot die.

it was a cryptid that lives a very long time and does not have to eat very often. Humans can live 100 years and go 30 days without eating, and 3 days without drinking. To a mouse that would be amazing.

I guess you didn't realize that the University scientists had also left the crate under the stairs for over a hundred years, and forgotten about it.
It's called hyper-reality. A bit like how there's a monster on the wing of the plane in that Twilight Zone episode.
