Because in Alien they didn't want to be seen with overt equivalent of HAL. (except for the self-destruct countdown).
It would appear they are not concerned with that this time.
It's been suggested before that the Nostromo was a low-tech, old-generation spacecraft compared to the tech seen in the later films (which are prequels) which are more updated.
shareUSCSS Nostromo was just a cargo ore hauler, not a high tech military-type spacecraft, for all we know the MUTHUR system was only intended as an auxiliary system on these company transport craft, which Weyland-Yutani used to their advantage once again when the beacon from LV-426 was intercepted.
So in short, no voice activation system necessary, though we do hear Ripley crying out "MUTHHURRRR" at the end of the film.
I think you mean deaf. Muther can clearly speak during the self destruct sequence all over the ship.
