If Jor El can make himself appear and interact in his fortress then he can do anything.

Or my guess is that it was not a recording and J's spirit is in the craft with him keeping him up to date on earth things.

Using modern parlance, Jor El is a type of AI projection.

Jor El back on Krypton didn't just make thousands of static video recordings. I mean, we see him actually talking to Kal.

So it's not inconceivable that the ship was picking up radio waves transmitted from earth and using the information to teach the infant more about the planet he's heading towards.
