shareIt has been scientifically proven that alcoholism is a disease. Approximately 12% of all people have a genetic deficiency which makes them tolerate a lot higher amounts of alcohol than other people, hence addicting them to it. They can go on drinking, when others stop due to especially nausea. When most people feel nauseous the next day, alcoholics crave yet another drink.
Hence, when you call them weak-kneed, you clearly don't understand what they are going through. People who get hung over after just drinking for 1-3 days don't require any willpower to stop - stopping comes natural to them. An alcoholic on a bender must really fight to overcome an urge to go on drinking. That requires strength.
You should distinguish between drunkards and alcoholics. Being drunk doesn't make you an alcoholic or vice versa. A person can be drunk every weekend and more than that without being an alcoholic. And indeed, a person can be completely sober for years and still be an alcoholic.

Alcoholics don't drink and go to meetings
There are both functional alcoholics and non-functional alcoholics (they used to be called abusers in the past, but I think the term changed) aka winos or alkies in the UK. My paternal grandfather was a functioning alcoholic while my maternal uncle was a functional for most of his life but ended up a wino. Both of them died more or less premature deaths.
