I'll be boring and go with his crime movies:
Napoli Violenta (1976) - an insane crime epic with absolutely no story but Merli going around kicking ass for 90 minutes and very well-directed.
Roma a Mano Armata AKA Tough Ones (1976) - more of the same, but with a little more action and insanity spread around.
From Corleone to Brooklyn (1978) - not sure why I have such a soft spot for this one. I guess I just enjoyed the story and it's fun to see Lenzi bring Maurizio Merli to America.
I have to admit EATEN ALIVE (1980), though awful, is one of the funniest movies I have ever seen. It's a lot like MIGHTY PEKING MAN in that not 2 minutes goes by without something insane happening. NIGHTMARE CITY has a similar distinction, but something about the dated dirty disco glum Madrid of the early 80's locale kinda puts me in a depressed mood whenever I sit through it (which is often).

I have to say that I love every crime film Merli was in. The man was just perfect as the pissed off cop that goes on a rampage. In fact, I have a hard time taking him seriously in any other genre.
Eaten Alive is fantastic! The opening credits with Janet Agrin walking past the city lights with the disco score pumping is fabulous. Ivan Rassimov is one of my favorite actors in Italian genre cinema, and him as the Jim Jones character was over the top for me. You really couldn’t ask for much more in an exploitation film!
