What makes the McRib so popular?

It's basically the food the lunch lady served you as bbq while in school. I have a theory the only people who like it don't live in towns with real BBq.

Don't know. I had one this past weekend and it wasn't that great. I remember them being better!

It tastes like ground up hot dogs made into a patty. But meh it's fast food and one per year isn't gonna kill you.

It's delicious

Its so bad, I tried it maybe twice, first time hated it, waited a while and thought it couldn't have been that bad if could it? It was even worst the second time. I think I threw it away after one bite. Nasty shit, didn't have one in over a decade

I just can't wrap my brain around this why people like it so much, but your theory does sound good to me!!

It's so popular because people are easily tricked by marketing gimmicks. This Google AI overview sums it up perfectly:

McDonald's doesn't sell the McRib year-round because it's designed to be a limited-time offer (LTO) to create excitement and boost profits:

Supply and demand
The McRib's popularity comes from its scarcity, which creates anticipation and excitement.

The McRib has been a limited-time menu item since it was removed as a permanent item in 2005. It's typically available in the fall, but the timing varies from year to year. The McRib has returned to McDonald's locations in 2012, 2018, 2019, 2020, and 2022.

I'd much rather have one of their burgers, which are made from ordinary 80% lean ground beef, than some simulated rib-looking thing made from what amounts to a variant of SPAM, drenched in a syrup that's allegedly "BBQ sauce":

McRib Sauce

Ingredients: Water, High Fructose Corn Syrup, Tomato Paste, Distilled Vinegar, Molasses, Natural Smoke Flavor, Modified Food Starch, Salt, Sugar, Spices, Soybean Oil, Xanthan Gum, Onion Powder, Garlic Powder, Chili Pepper, Sodium Benzoate (preservative), Caramel Color, Beet Powder.

There's more HFCS (a liquid form of sugar) in it than there is tomato paste or any other ingredient aside from water, and then they add molasses on top of that (another liquid form of sugar), and then they add sugar again (between salt and spices). Is the McRib supposed to be a dessert food?
