Bear meat


Just curious - has anyone here ever had it ? And if so, how does it taste ?

I assume RFK Jr. has, so maybe its a thing up north, I dunno.

I had Caribou when I visited a friend in Quebec City, in a restaurant - it may have been the preparation, but I thoroughlyl enjoyed it. Wouldn't surprise me if elk tasted good as well - both ungulates, etc.

It's the best tasting meat I've ever had (Maine black bear). Unfortunately there wasn't much left when I tried it so I only got to eat about 1/4-pound piece of it. It was smoked in a traditional smokehouse and it was extremely tender, but not like stewed meat that falls apart. It reminded me of the best cut of ham or smoked pork shoulder imaginable in terms of its physical characteristics, but with a darker/browner color and a different, and better, flavor. I could have sat down and eaten 3 pounds of it and nothing else and it would have been the best meal ever.

However, that doesn't necessarily mean it's always good. I have a friend that's had bear meat quite a few times, and he said it can vary from really good to really bad. He also lives out west so those would be different species in different habitats and with different diets than a Maine black bear.

cool ! I'd imagine, like many animals, a young tender one tastes a lot better than an old grizzled (or grizzly) one. :)

The thing about eating a bear is that a bear, with not a whole lot of provocation, would eat you. So there is a bit of proportionality to eating one which doesn't apply to a deer/elk/caribou/etc.

No, I’ve never had it but I have not heard great things. From what I’ve read and heard from hunters bear fat is very rancid tasting so the animal has to be butchered and cleaned very expertly. Otherwise the meat is nearly inedible.

That kind of makes sense - they carry so much stored fat (for hibernation) that I suppose bad things happen in there. Not at all the metabolism of a lean built grazer/browser.

otoh, if we're talking survival, a lot of fat is a very very good thing to have on hand, taste to the side.

True, gotta have some fat in our diet. There’s a condition called ‘rabbit starvation’ whereby if a person consumed, in say a survival situation, almost entirely only wild rabbits they would eventually wind up nutricionally deficient and very ill as wild rabbit is very lean.

The human diet does require a reasonable amount of animal fat.

There's a reason we only eat herbivores, not carnivores. Eating bear would be like eating a dog. And bears are related to dogs, though distantly.

Bears are, like us, omnivores, often tending to the veggies & insects & fish along w/ carrion & game. They don't have any problem eating us, for example. So fair's fair.

Bears, in the caniform clade, are also related to pinnapeds and all manner of other critters, generally predatory - but are somewhat distinct in their omnivorous feeding habits - they can even digest grass. The ultimate opportunists.

Chinese eat all types of shit - scaly anteaters, bats, blah blah blah. They can make food out of anything. So?

Bears, like any mammal which eats meat, is just not good tender palatable food.

Bears are considered doglike carnivorans, or caniforms, and are thought to have evolved from doglike ancestors

Maybe, but I have evidence otherwise. In this thread. Have you eaten dog, or bear, or is this just a theory ? I share the hesitation, on the same general grounds, but the facts of the matter may indicate otherwise. Regarding dogs, we have a strong cultural taboo against using them as food - quite apart from their carnivorous character.

I do know that horse, another herbivore, tastes (to me, anyway) horrible. So diet is no guarantee of tastiness, in my experience.

Okay, interesting.

I'm not an animal rights guy by any stretch of the imagination. And I'll try anything once. Yeah, I'd sample bear meat.

I would think horses would be more muscular with tough meat whereas cows are soft fat grazers.

Its just nasty. Had some in Spain. I'd probably give bear meat a taste - if just as a whiff of revenge. Of course, that works both ways. :)

No, I don’t really have any interest in it. I think there is an episode of the 70s TV show Emergency! where people get sick from eating it.
