Because anyone who's seen the ugly side of real life knows that if you're ever trapped in a burning car, held hostage by a gunman, or diagnosed with a life-threatening illness, you will realize that the firemen, police, or doctor who could save your life matter at least as much as art. Art may make life worth the effort of living, but other things matter as well.
I'm talking about the creation of art. Not whether artists are more valuable to society than doctors or other lifesavers (they're not).
Yes, my statement is a bit of trolling, but it's in reference to Disney's decision to censor The French Connection. They're putting other considerations ahead of *art* and that's what angers me, and it's why I talk about the primacy of art.
But I'm not *that* absurd. I don't think art is more important than more immediate concerns, like medicine and nutrition.

I do agree though that art should generally be admired and I admire artists for the most part.

This is what I told the gendarme after I pushed a kid in front of a tram because she was in my way while I was in a hurry to get to the Louvre. He didn't really agree, but I made him a nice little pastel caricature of himself and he skipped away.

Yes, I'm okay with flowers, fruit, and faces; however, the audience needs to understand why a face is growing flowers out of it and why a pair of pares are there instead of breasts; there's a reason why the plot/story is more important.
If we're talking about an experimental film, that's another subject.
