It's strange how chicken wings used to be the least wanted piece of the chicken, now they are an item unto themselves. It was a genius marketing move by somebody, somewhere to sell them as a snack with sauce and dip. I don't mind them, but the wrong sauce can ruin the whole deal. I prefer good old fashioned barbecue sauce.

Chicken wings are messy to eat and lack a satisfying amount of meat.
Also, the skin, if the fat isn't melted away, has a gross taste that makes me want to vomit.
If you bake them in the oven most of the fat burns off and what little fat remains adds flavor
Start with frozen wings, get the oven up to 400 degrees and spread the wings on a rack above a cookie sheet, bake for one hour and 15 minutes, flip them halfway through
*Pro Tip...toss some onion rings or french fries in the oven with 20 minutes to go and melt half a stick of butter and a big splash of Frank's Hot sauce or better yet Sriracha in a pan for tossing👍

I like chicken skin if the fat is rendered off but it not it really gets me!
Last night I was at a party with Latin people. They made pork roast with the skin on, and it became crispy with no fat left and damn----that was tasty!!
The Dominicans and Puerto Ricans I know cook (in an oven or crockpot) a pork shoulder low and slow...They call it Pernil, it has lots of spices and takes 5-6 hours and requires a great deal of marination and soaking the day before for flavor
It's a bit of work but the sides are easy enough (yellow rice, Fried plantains and beans)
I've cooked this feast several times with my Lady, it's an amazing meal

The rice had olives and capers in and was making me more hungry as I ate it, very good.
Also, we had these tiny empanadas, which have a different PR name. Also excellent.
Of course. I don't mind whether it's breaded or unbreaded. But not too hot. Blue cheese sauce sounds good.
