From what I understand, what Americans typically think of as Chinese food is at least somewhat based on the cuisine of the Guangdong region of southern China (because most Americans of Chinese origin originally came from that part of China), though modified due to the different ingredients available to work with in the US as well as different American tastes.

There really is no unified "Chinese food" though. China is massive and has widely varying climates and local cultures. Cuisine in China varies pretty widely by region, between north and south and even between different provinces due to the different kinds of food grown in different areas (though now that China is much more interconnected than it once was, this difference is probably diminishing). I remember when I read a book about the Long March of the Chinese Red Army in 1934-35, one of the things mentioned in it was that soldiers who were used to the food of southeastern China sometimes got sick from eating the very different food of northern China because they weren't used to it and it was such a big and sudden diet change.

Maybe they should start adding the region to specific dishes, like calling it north and south chinese food.

I looked up several of your keywords and apparently what I know as 'Chinese' food is more accurately described as Cantonese and the dominant language there is Yue!
Also, Cantonese chefs are highly sought after though Cantones is but one of 8 Chinese cooking styles

I always get confused as to what I want to order. There are a lot of options and some don't quite work for me although they are very popular. I don't like the sticky glaze they put on chicken pieces. I prefer rice to noodles. Shrimp is good but what kind of sauce? I like that curd patty with the brown gravy, but always forget what it's called. Funny how you can find General Tso's Chicken everywhere, like the local deli and Panda Express. Another place around here was known for huge portions, even with their carry out. You could spend $10-12 and eat for two days. Oh ! And I like Egg Rolls, but inevitably they are very greasy so that's a turn-off.

It's really good. You cut the steam off and trim the top portion of the leaves then she place the artichoke in a large pot a boil the artichoke for about 50 minutes. You eat it buy taking a leaf off and eating the meat of the leaf; there are several leafs in one artichoke. The artichoke can be dipped in mayonnaise (which is the best; that tastes amazing) or people like to dip it in butter too. Then the bottom of the artichoke, you can cut off with a knife and it is the artichoke heart which you also eat it with mayo or butter. Most favorite vegetable in the world. My husband loves it when I make it for him; it's one of our favorites. :)

I love artichokes, and my preference is eating them with mayo too.

Don't know if you have a Trader Joe's in your part of the world, but if you do, they sell packages of 4 small artichokes, and they only take about 20-30 minutes to cook. I steam them. Delicious.

I do have a Trader Joes but I buy my artichokes at Whole Foods because they are jumbo sized. So big and super delicious!!!

Deluxe pizza is sausage, pepperoni, green peppers and onions. Canadian pizza has bacon, pepperoni and mushrooms.

Probably Chicago Deep Dish Pizza. I haven't found it around here, but I haven't looked too hard. I'll have to check out MOD pizza or La Perla. There is also a nice place near campus but the name escapes me. I don't mind a Caesar's Deep Dish, but it sure isn't the same.
I have roommates who feed me, and I'm getting really sick of breaded pork chops. A week doesn't go by w/o them.

They make them for all of us, so I don't want to signal I am unhappy with this particular entree. She makes something almost every night, and usually it works. I just don't understand this affection for breading.

A breaded pork chop gets pretty uninspiring week after week. I just wish she would cut back the frequency. Maybe with summer coming up they will grill hamburgers more often. She's going to make some kind of chicken tonight.

It's in the nuke right now, along with mixed veggies, the frozen kind. That's what gets me. Sure she works and all that, but for someone who claims to enjoy cooking, she sticks to less than ten meals and has no flair.
Fresh vegetables are more expensive than frozen, but they are a real treat, and I doubt any of us are lacking protein in our diet. (Apologies to anyone who is food starved but is here on MC.) I have never cooked much, but I'd get bored making this stuff over and over. She buys food like we are living through a depression.

None of us are young people, and my roommates are a couple. Previously they had lived in the local Mission for 2-4 years, and got married the day they moved in here. The dynamic between us isn't great. We get along fine, but I'm me and they are them. Sometimes they seem a little clueless or stubborn and of course, I'm no saint.
So I don't feel comfortable telling someone who enjoys cooking they need to improve and change their routine. I don't know why she never makes lasagna, (although it does take a bit of effort from what I've heard), or maybe a chili or stew with Andouille sausage.
Mom used to make something she called Hungarian Goulash. One of those ground beef, elbow pasta and a couple cans of Campbell's Soup things. I wish I could remember the recipe, but it was simple and tasty.

You don't have to say it that way to her. Just give ideas about what to eat. Maybe she appreciates your input.

Red Irish potatoes buttered with the Kerrygold brand is delightful.

Seafood; hush puppies, salmon, cod, tilapia, flounder, grilled blackened catfish, fried clam strips, alligator tail, cocktail shrimp, grilled jumbo shrimp, lobster (with mac and cheese), and boiled crawfish.

As someone who really likes shrimps the word jumbo shrimp is intriguing to me.

It has a very crisp, mild flavor; best when seasoned. I recommend cooking it with garlic.

A party in the Louisiana swamps is not complete without a crazy-looking two-mouthed fish, similar to the Xenomorph from "Alien" (1979), swimming furiously against the hot catch of a fishing line while a the sound of a banjo strums excitedly in the background!

My Irish friend and neighbour would heartily approve! She buys Kerrygold exclusively, and I'm certain she's a fan of red Irish potatoes too.

Hush puppies are seafood?? All this time I thought they were slightly sweet fried bready thingies. Lobster with mac and cheese sounds great, and I'd have never thought of that combo. I love almost all seafood.

Ever since I first saw this today I've been pondering what my favourite food is. I can't come up with an answer. It's like with movies or songs, I can narrow down perhaps by genre, or year, or band maybe, but just to have one favourite? I just can't pick one.

Supposedly the working title of the Beatles / McCartney song Yesterday was Scrambled Eggs.
And yes, I enjoy eggs in all their varieties, especially adding cheese. Scrambled eggs is super easy.

I've heard that melodies will come to a songwriter and they will use place holder words to start putting it together. That's why Scrambled Eggs. And it sorta fits -- Scrambled Eggs, (bum, bum, bum), all my troubles ....

Speaking of scrambled eggs, a good friend of mine used to make a quick and easy meal of cheesy eggs and rice. I once suggested she use brown rice instead of white rice and she actually snapped at me about liking white rice. I suppose you can take a half cup of Uncle Ben's and make it in no time, while I believe brown takes longer. Maybe that was the hang up.
