Steven Spielberg: hmmmph. i'll park my vote with close encounters, even though i don't really love that movie. i've never seen jaws, and that's the only film of his i can really see myself really liking.
Martin Scorsese: after hours
Alfred Hitchcock: psycho
Tim Burton: ed wood
Stanley Kubrick: 2001
Ridley Scott: alien
David Fincher: The Social Network, though i've seen zodiac more times...toss up between those two for me.
George Lucas: empire strikes back
James Cameron: Aliens
Joel and Ethan Coen: fargo
Quentin Tarantino: Pulp Fiction
Christopher Nolan: memento

With Chris Nolan I'm against the grain and The Prestige is my favorite.

I have to note that I do not particularly like all of these movies.
