Ken Burns' BASEBALL was extraordinary. Also, Leni Riefenstahl's OLYMPIA is a very interesting historical doc.

I also like most of Bud Greenspan's Olympic efforts.

On Any Sunday is wonderful and is from 1971. It is about motocross.

FMX rider Nate Adams' has a documentary out on his career that is very interesting. It is called Full Circle and talks about his rise and fall and comeback after injury.
