Big fish and Moonrise Kingdom are unique in the cinematography department. I wasn't a huge fan of either of them (I don't really like surrealistic looking cinematography) but it still was beautiful Prisoners and winters bone are two movies I love with darker cinematography (not really what you asked though lol)

Aesthetically, try Enter The Void.

If you haven't seen 2001: A Space Odyssey yet, see that as well.

The New World (also by Malick - director of Tree of Life) is also visually beautiful with amazing cinematography. Actually, just see all of his films. He's great.

Soy Cuba is amazing too.

Under the Skin (2013) Not fantastically entertaining, but interesting in terms of the look and mood it was trying to achieve; it was meant to show the human race from the perspective of a visiting alien.

The Double (2013), about a man dealing with his doppelgänger, had a unique look to it.

Brazil (1985) was pretty much driven by its cinematography and set design

I second Brazil and Under the Skin.
