Isn't it weird that the husband character never comes back as a zombie?

It just feels like screenwriting 101 to have his zombie play a role later on. But after you see his eyes turn white he never shows up again in the movie. Even that old lady shows up again as a zombie to guilttrip her sister/friend into opening the door (?).

I think the filmmakers decided against it because he was so likeable and the tragic fall was a perfect end to his situation. He really set a tone of responsibility and lightheartedness for the characters. Battling him afterwards may have been a complication that would have gotten in the way of the rest of the story.
