I didn't find her reaction unbelievable. Not everybody would respond to something like that by shouting. She expressed disgust and an almost "you're dead to me" attitude.
The whole "is this or isn't this real" vibe to many of the scenes reminded me of "Joker". I guess in the end we're supposed to take it all as real, other than the appearances of his dad looking like Groucho Marx.
Very good performances by Adrian and Dascha.
One thing I found frustrating (watched it on Tubi) was that the parts spoken in Spanish were not translated in subtitles. Even if turning on subs, you would just get [shouting in Spanish] or [speaking spanish] on screen. I got sorta the gist of some of it, but there are a few conversations where it would have been nice to know what they were saying. If you the official trailer for the movie the Spanish parts ARE sub-titled into English. Such as the prayer Gilbert's mom is saying at the table talking about him.
